It was wet, airy, and has come out extremely light. I can't wait to slice into it - it rose like an air balloon over the radiator on the sunny windowsill.
The recipe is simple
500gms of strong white flour - or whatever mix you like - I substituted 200gm of the flour with the almond puree
7g packet of ready dried yeast
350ml of tepid water
Mix courageously - leave to rise in a well floured bowl - covered with a clean tea towel.
After the first rising - "knock back" and knead till resistance is felt but not too much.
Place carefully in well floured tin or shape onto a baking tray -
Leave in a warm place for final rising - then steadily put into a HOT oven, turning down to 200 degrees after 5 minutes.
The loaf should be ready after 25-30 mins cooking - you know your oven better than I do.
It's done when you hear the hollow sound on the base of the out turned loaf.
WAIT until it's cool before attempting to slice - a hot loaf is tempting, but slicing into a hot loaf RUINS it...but - not that much.
Enjoy with home made jam - or the left over cheese from the Christmas Hamper....
